Notes

Recipe: 20 wt% fibres, 70 wt% sterile demineralised water, 10 wt% grain spawn; inoculation rate calculated from this (10/20). Filled into the mould in layers and compacted with a spoon. Demoulded after 8 days and grown for at least 8 more days without mould. Dried for 5–10 h until constant mass. Mass loss = initial moisture content per ISO 16979 (Table 2). Pre-compressed during the second growth phase (cf. PHL).
